Avocado pesto naan pizza
1 naan ( I usually use the non frozen one from whole food )
1 ripe avocado
2 TBSP raw unsalted pine nuts
1 TBSP lemon juice
1 clove garlic, grated
1 bunch, or big handful of fresh basil leaves
1 TBSP extra virgin olive oil
4 ounces fresh mozzarella
4 5 grape or cherry tomatoes cut in half, or you can also use slices of larger tomato
Preheat oven 375 .
In a food processor blend together peeled and pitted avocado, pine nuts, lemon juice, garlic, and basil until smooth. Stream in extra virgin olive oil until incorporated and smooth
Season with salt and pepper and spread on naan
Top with chunks of fresh mozzarella and tomatoes.
I like to add 1 tbsp of crushed red pepper
Place the naan on the parchment paper onto the pizza stone.
It’s will be done when the cheese is bubbling and naan is golden on the outer age
